            Rose Wine

 

            We love Rose Wines at Domaine Kikones! 

 

            Rose wine keeps a special place in our hearts, firstly as it is unjustifiably underestimated and secondly, because it was the first wine that Melina Tassou, the Chief Winemaker of Domaine Kikones, ever created during her studies in Brittany, France, where the famous Rose d'Anjou is produced.

 

           "Saigné" method is used to produce the Rose Kikones. This means that after the sorting table, the tank is filled up with whole berries (no crusher) to make red wine and after a 24 hours delay, all the free run juice is collected to make Rose Wine. This means that Rose Kikones is made each year by blending different red varieties, the ones that need more concentration as red wines. That's why the variety that is usually dominant in Rose Kikones is the Limnio. Limnio is the red variety with the lowest color intensity, so the Rose Kikones always contains a large proportion of Limnio. In this way, simultaneously red wines are naturally concentrated as the proportion of skins to juice changes through the "saigné" method. Apart from that, other varieties are added and these are taken for the production of the Kikones Rose, whose composition varies annually according to which red variety requires more concentration.
